We've discovered a fish dish that'll transport you to the Islands. It's also one of the most flavorful ways to prepare mahi mahi.

Chef Tello Luna of Harry's Poolside Bar & Grill at the Rosen Centre demoed his Steamed Mahi Mahi with Coconut Curry Sauce.

"We're going to steam the mahi mahi in a banana leaf," he told us. "It's going to keep it moist and it's going to give it a lot of flavor. You can do this at home."

Chef starts by seasoning the fish.

"Cumin, paprika, oregano, thyme, salt pepper and garlic — little bit of everything," he said.

For the coconut curry sauce, you have a sweet and spicy thing going on. Chef encourages you to drown your filet with the liquidly goodness during plating. you can drown your fish during plating.

Steamed Mahi Mahi with Coconut Curry Sauce

8 each Mahi Mahi (6oz.)
3Tablespoons blackening seasoning
8 each banana leaves
2 Tablespoons vegetable oil

Instructions:

Rub the seasoning on each side of the mahi mahi. In a pan with hot oil sear both sides of mahi. After searing, wrap each mahi in a banana leaf and cook in a steamer for approximately 8 minutes.
Option: This can be served with coco flavored rice and tostones

Coconut Curry Sauce

• 1/4 C Oil
• 1 Table spoon Crushed Red Pepper
• 2 Table spoon Garlic (Chopped)
• 1 Table spoon Curry Powder
• 1 Ea. Coconut Milk
• 1/4 Cup Soy Sauce
• 1 Table spoon Sugar
• 5 Ea. Basil Leaves
• Corn starch for Slurry
• Salt & Pepper to taste

Instructions:

Sautee Garlic, Crushed Red Pepper, and Curry Powder
Add Milk, Soy Sauce, and Sugar
Bring it to a Boil
Add Slurry until Thickened
Add Basil and Salt & Pepper
